The National Foundation to End Senior Hunger and D.C.'s Office on Aging are working together to reduce food waste in the nation's capital. It's estimated that 40% of food in America is thrown away. The fact that 15% of D.C. seniors go hungry, according to the D.C. Office on Aging, makes such a waste even more striking. The seniors at the Hattie Holmes Wellness Center and two other centers in the city are studying "plate waste," or the food leftover after meals, in order to adjust the food that the center buys. The goal is to ensure that what's bought is eaten and less food is wasted, while keeping the meals nutritious. The food that is uneaten is composted, and the soil produced will be used by the seniors to grow a garden in the spring.
